Crème Anglaise.Basics of ice cream

Half /half
This advanced vanilla ice cream is made from Crème Anglaise(vanilla sauce).
Normal creme anglaise recipe call for 100% milk
In ice cream creme anglaise,substitute 50% of the milk with cream (half /Half)
instead of 100% milk that you normally use.


Normal Crème Anglaise= 100% milk
For ice cream Crème Anglaise:50% milk +50% cream=100% milk/cream(half half)

You can use any Crème Anglaise recipe. substitute half the amount with cream.Others ingredient remains the same.
The half amount of cream makes the Crème Anglaise richer in taste and smooth in texture.


This Crème Anglaise is the basics for most of the ice cream.

Crème Anglaise+fruit puree or flavoring= ice cream

Example:Rhum and raisin ice cream,green tea ice cream,strawberry ice cream,chocolate ice
cream,coffee ice cream,cookies and cream ice cream.....


Cooked whole milk Creme Anglaise
If you have some already cooked whole milk creme anglaise,add in some whipping cream will do.
